In Retrospect 7 help was written :

 

Exchange 2003 and Exchange 2000

After restoring the rest of the computer, restart the Exchange services but make sure the databases are not mounted. Delete everything from the storage group folder or folders. This ensures the log files match the databases and allows you to remount the stores after restoring the databases.

 

After everything is deleted, restore the databases. (For more information, see Restoring a Storage Group or Database.)

 

After restoring, the databases should be mounted and ready for use.

It depends on what you want to restore. If you want to roll back the live database you can simply run a restore without deleting everything. If you have problems you can unmount the store, delete everything and try again.

 

You can restore mailboxes at any time.
