Clients per server

I was running 50 client workstations and a webserver on a Windows XP workstation with 3GHz processor and 1GB of RAM. Often the CPU would run at 100% utilization, but it was stable for 6+ months.

I have recently moved to a PE1900 with a 2.0 GHz quad core processor, and it rarely peaks above 30% (combined) CPU utilization, and is often idle. With 4 GB of RAM, the paging file has remained almost untouched.

My guess is that your system should be able to easily handle 100+ clients. Network speeds may be your biggest issue. I have noticed that Retrospect made use of the two NICs I had on the network before I teamed them, so that may be worth looking into.
