Backup Client's Outlook PST Files and My Documents

What's the best way to set up a Backup script to do the following?

 

Backup all client computers C:\My Documents folder and Outlook *.pst files?

 

I want to test the script on the few clients I currently have set up and then be able to automatically add more clients. I have six clients currently set up and 50 more to add to Retrospect!
